Ingredients

  • 1 packet of dry active yeast
    2 cups of warm water
    5 1/2 cups of all-purpose flour
    1 cup of olive oil

  • 2 teaspoons of kosher salt (as well as extra for sprinkling)
    1 1/2 tablespoons of white sugar
    2 tablespoons rosemary

Instructions

  1. Begin by activating your yeast. Mix your packet of yeast with warm water and sugar until all the dry ingredients fully dissolve. Allow this mixture to sit for about twenty minutes.
  2. Mix flour, salt, and rosemary in a large bowl. Slowly introduce your olive oil and mix thoroughly. This step may prove difficult, but try to mix the olive oil as thoroughly with the rest of your ingredients as you can.
  3. Slowly combine your flour mixture with your activated yeast and water. As you combine, stir continuously. The resulting dough should be sticky and somewhat stretchy.
  4. Cover this bowl with a dry towel or strip of cellophane, then allow it to sit in a warm, dark corner for around two hours.
  5. Once this dough has risen, punch it down. On a floured surface, knead the dough for ten minutes or so, until you have formed a single ball. Place this ball back into the bowl, recover, and then refrigerate it overnight.
  6. After the dough has been refrigerated for at least twelve hours, remove it from the cold and allow it to rise for another two hours or so. From here, spread the dough into a large sheet pan. Don’t strive for perfection here; have fun with it! Use your fingers to pole holes into the surface of the dough down to the bottom.
  7. Drizzle olive oil, salt, and any other desired herbs across the surface of the bed, then place into a preheated oven. Bake at 400 degrees Fahrenheit for twenty-five minutes, or until the bread has reached a golden brown color.
  8. Allow the bread to cool for at least ten minutes before enjoying it. Cut into slices, rip apart with your hands, or enjoy it as a base for your favorite vegan “cheese” mixture!
